Soak the bulgur in a bowl with boiling water. Cover and leave to sit for about 15-20 minutes.
Add oil to a frying pan, saute the onions on medium heat until it's tender. Then add the tomato and pepper paste. Stir them well for few minutes.
Combine bulgur and sauteed mixture together in the bowl. Mix them well.
Add all the chopped greens, spices, pomegranate molasses, lemon juice, and salt into the bowl. Then mix all.
Your Turkish Bulgur Salad is ready. Afiyet Olsun!
You can serve it hot or cold and add pomegranate as a topping.
